White Chocolate Cranberry Loaves

This bread is absolutely incredible... Heck, even the raw batter is delicious! :-) The recipe is big too -- It yields 2 loaves, or else you can make 1 loaf + 3 mini-loafs. (Like I did for the photo above.) It smells so good while baking you'll find yourself just staring at the oven timer waiting for it to be done - ha ha! Enjoy!

Ingredients:

  • 1 18¼ oz box white cake mix (I used Duncan Hines Super Moist Delux Classic White)
  • ¾ Cup unbleached flour (I just used white flour)
  • 1 tsp orange peel
  • 1 cup fresh cranberries
  • 1 large egg
  • 2 large egg whites
  • ¾ cup water
  • ½ cup orange juice
  • 2 Tb unsweetened applesauce
  • 1 cup white chocolate chips

Directions:

Preheat oven to 350F. Prepare 2 loaf pans with cooking spray. Mix cake mix, flour and orange peel. Add egg, egg whites, water, orange juice and applesauce. Fold in cranberries and white chocolate chips. Spread batter evenly between the two pans. Bake for 45 minutes or until a toothpick inserted in the middle comes out clean.

This entire recipe yields 20 servings.
