Turkey Taco Soup

This soup is delicious and SO EASY/FAST. I took a few different taco soup recipes, combined them, and then added my own touch. My whole family loves this. Alter it to suit your tastes. Enjoy!!

Total prep/cooking time: <15 minutes

Ingredients:

  • 1 lb 99% fat-free ground turkey
  • Onion, to taste, chopped or grated (I grate 1/2 small onion)
  • 1 (15 oz) can of chicken broth
  • 2 (15 oz) cans of your favorite beans, rinsed and drained (I use 1 can of black and 1 can of red)
  • 1 (15 oz) can of corn, drained (or use 1-2 cups frozen corn)
  • 2 (15 oz) cans diced tomatoes (do not drain)
  • 1 packet taco seasoning
  • 1 packed ranch dressing mix

    Optional Ingredients others have used and recommended (These will alter points):

  • Substitute turkey with vegetarian crumbles or ground beef
  • Rotel tomatoes
  • Bay leaf
  • Tomato sauce
  • Pinch of cayenne

    Optional Garnishes:


  • Avacado
  • Mexican or Cheddar Cheese
  • Fat-free Sour Cream
  • Guacamole
  • Tortilla Chips

Directions:

Brown turkey in pan with onion until thoroughly cooked. Then put ALL ingredients in a big soup kettle and bring to a boil. Simmer for 10-15 minutes or until all flavors are blended to your liking. Serve and enjoy!
