This soup is delicious and SO EASY/FAST. I took a
few different taco soup recipes, combined them, and then added my
own touch. My whole family loves this. Alter it to suit your tastes.

Difficulty Level: VERY easy
Total prep/cooking time: <15 minutes
- 1 lb 99% fat-free ground turkey
- Onion, to taste, chopped or grated (I grate 1/2 small onion)
- 1 (15 oz) can of chicken broth
- 2 (15 oz) cans of your favorite beans, rinsed and drained (I
use 1 can of black and 1 can of red)
- 1 (15 oz) can of corn, drained (or use 1-2 cups frozen corn)
- 2 (15 oz) cans diced tomatoes (do not drain)
- 1 packet taco seasoning
- 1 packed ranch dressing mix
Optional Ingredients others have used and recommended (These will
alter points):
- Substitute turkey with vegetarian crumbles or ground beef
- Rotel tomatoes
- Bay leaf
- Tomato sauce
- Pinch of cayenne
Optional Garnishes:
- Avacado
- Mexican or Cheddar Cheese
- Fat-free Sour Cream
- Guacamole
- Tortilla Chips
Brown turkey in pan with onion until thoroughly cooked. Then
put ALL ingredients in a big soup kettle and bring to a boil. Simmer
for 10-15 minutes or until all flavors are blended to your liking. Serve
and enjoy!
