Tangy Taco Salad

This is an extremely tasty and satisfying salad -- just perfect for those days when if I'm craving Mexican, but looking for something healthy to eat. I created this salad as a low-fat, vegetarian alternative to my coworker's taco salad recipe. I like to make this with the optional mexican cheese, baked Doritos, and avacado for a delicious, filling 8 point meal.

Ingredients:

  • 1/4 cup refried or pinto beans
  • 1 cup of romaine lettuce
  • 1 baby roma tomato, chopped (1/4 cup)
  • 1/4 medium red pepper (1/4 cup)
  • 1 scallion, chopped
  • 1/4 cup salsa
  • 2 Tb fat-free Catalina Dressing
  • Fresh cilantro, to taste

    Optional Ingredients:


  • 6 Baked Doritos (14 g), crushed (Adds 1.3 points to the salad)
  • 1/8 cup reduced-fat shredded Mexican Cheese (Adds 1 point to the salad)
  • 1/4 medium avocado (Adds 2.2 points to the salad)

Directions:

Heat beans in microwave for 1 minute. Transfer to salad plate. Arrange lettuce, tomatoes, pepper, scallion, and avacado over the beans. Drizzle fat-free Catalina dressing over the salad and top with shredded cheese, crushed Doritos, and fresh cilantro.

Yields: 1 salad
