Jaime's Homemade Fresh Salsa

Salsa is a lot of fun to make! You can use whatever ingredients you have on hand or like the best, and you can adjust everything to suit your own personal tastes. The ingredients below are just what I happen to use, but please feel free to play with this recipe as much as you'd like!

Ingredients (Adjust EVERYTHING to taste!):

  • 5 medium tomatoes (Vine or Roma work very well)
  • ½ jalapeno pepper, seeded and chopped
  • ½ green pepper, seeded and chopped
  • 2 scallions (green onions), chopped into thin slices
  • 1 small yellow onion, chopped
  • 6 cloves garlic, peeled and chopped
  • Generous handful of fresh cilantro
  • 1 Tb lime juice
  • 1 tsp cumin
  • Salt and pepper to taste

Directions:

You can prepare any the ingredients either by hand or using a food processor, depending on what texture you like your salsa. I like to chop my scallions very thin by hand. I seed and chop half of my tomatoes by hand; the other half I puree (seeds and all) in my food processor. I also use my food processor to mince the peppers, yellow onion, garlic, and cilantro. Mix everything in a medium bowl. Add lime juice, cumin, salt, and pepper to taste. Stir it up and serve!

Yields: 2 cups (8 servings)
