Romaine Salad with Fresh Mozzarella
and Grape Tomatoes

Looking for a fresh, tasty salad that's both healthy and filling? Well, this one is delicious! And what a great way to combine those veggie and dairy servings in just one meal. Enjoy!

Prep Time: >5 minutes

Ingredients:

  • 2 cups fresh romaine lettuce
  • 1/2 cup cherry or grape tomatoes (about 1/2 pint, or 10 grape tomatoes)
  • 2-oz fresh mozzarella (1/4 of an 8-oz ball -or- about 4 Tb-sized balls)
  • Dried or fresh basil, to taste

    Optional Toppings (These may add extra points)

  • Croutons (Italian Seasoned are great, and the ones I buy are 0 points!)
  • Fat-free Italian Dressing (0 points)

Directions:

Arrange ingredients in bowl.

Nutritional Info: 192.5 calories, 12.5 g. fat, 11.35 g. fiber (4 points) (This would be 2.5 points if it wasn't for the WW fiber cap!)
