Red Velvet Cake
with Cherries and Almonds

This is my Red Velvet version of the famous Better Than Sex Cake. I am so pleased with how it turned out; it's delicious! If you like chocolate, cherries, and almonds, you'll love this. Ingredients:

  • 1 box moist Red Velvet cake mix
  • 10-oz Diet 7-Up or Sprite
  • 1 egg white
  • 1 (20-oz) can of lite cherry pie filling
  • 1 (8-oz) container fat-free cool whip
  • 1/2 tsp almond extract
  • 1/8 cup sliced almonds
Directions:

Mix cake mix, egg white and diet soda. Bake at 375 degrees for 35 minutes or until toothpick comes out smooth in a greased 9x13 pan. Take cake out of oven, and poke holes all over the top. Mix cherry pie filling with almond extract and pour mixture over warm cake, filling in the holes. Cool completely. Cover cake with cool whip. Put in fridge until ready to serve.
