Pierogies with Sauteed Veggies

We eat this at least 2-3 times per month. I almost always keep frozen Mama T's pierogies and fresh veggies on hand, so this meal is perfect to whip up on a week night after work. It's nice and filling, and so incredibly easy to make. Enjoy!

Prep Time: >5 minutes

Ingredients:

  • 3 Mama T's Potato Cheddar or Potato Onion Pierogies
  • 1/2 cup cherry or grape tomatoes (about 1/2 pint, or 10 grape tomatoes)
  • 5 oz (about 3 cups) fresh spinach
  • 1 clove garlic, or to taste (minced)
  • Freshly ground black pepper, to taste
  • Fat-free cooking spray

Directions:

Arrange ingredients in bowl.

With 3 Potato Cheddar Pierogies: 273.5 calories, 2.65 g. fat, 20 g. fiber (5 points)
(This would be 1.7 points if it wasn't for the WW fiber cap!)

With 3 Potato Onion Pierogies: 263.5 calories, 2.15 g. fat, 20 g. fiber (4.5 points)
(This would be 1.5 points if it wasn't for the WW fiber cap!)
