Reduced-Fat Bisquick Pancakes

I just love these pancakes... They are one of my favorite comfort foods and I always have the three ingredients on hand!

Ingredients:

  • 2 cups Reduced-Fat Bisquick
  • 1 cup fat-free milk
  • 1/2 cup Eggbeaters (equivalent of 2 eggs)

Directions:

Heat griddle or skillet over medium-high heat or electric griddle to 375°F; grease with cooking spray, vegetable oil or shortening. (Surface is ready when a few drops of water sprinkled on it dance and disappear.)

Stir all ingredients until blended. Pour by slightly less than 1/4 cupfuls onto hot griddle.

Cook until edges are dry. Turn; cook until golden.

Serve hot, and top with your favorite zero or low-point toppings, such as fat-free butter spray, powdered sugar, Lite maple syrup, and/or fresh berries.

Yields: 12 pancakes (6 servings)

Nutritional Info (per pancake, with no toppings): 86 calories, 1.7 g. fat, 0 fiber
