Oatmeal Cinnamon Chip Cookies

These cookies are delicious! For just 2 points per cookie, you can't go wrong! Bon appetite!

Ingredients:

  • 1/2 cup applesauce *
  • 1/2 cup brown sugar
  • 1/6 cup sugar
  • 1/4 cup Eggbeaters (equivalent of 1 egg)
  • 1/2 tsp vanilla extract
  • 3/4 cup flour
  • 1/2 tsp baking soda
  • 1.25 cup oats
  • 5 oz Hershey's cinnamon chips (half of a 10-oz bag)
  • 1/4 cup + 2 Tb raisins

    * Using 1/2 cup (1 stick) of butter like the original recipe calls for will add 1 point per cookie. The cookies are delicious with the applesauce though, so don't worry at all about the taste being reduced. It won't be! :-)

Directions:

Preheat oven to 350 degrees. Beat applesauce, brown sugar and granulated sugar in bowl til creamy. Add Eggbeaters and vanilla; beat well. Combine flour, and baking soda; add to butter mixture, beating well. Stir in oats, cinnamon chips, and raisins (batter will be stiff). Drop by heaping tablespoons onto ungreased cookie sheet. Bake 10-12 minutes or until lightly browned. Cool 1 minute; remove from cookie sheet and place on wire rack to cool.

Yields 2 dozen (24 cookies) (2 points per cookie)

Nutritional Info: (per serving): 112 calories, 2.3 g. fat, 1.1 g. fiber
