Nacho Cheese Chowder

Yields: 5 (1 cup) servings | 4.5 points per serving

This is extremely easy to throw together and it's delicious! Imagine all the satisfaction of chips & dip disguised as a hearty bowl of cheesy chowder.

Ingredients:

  • 1 pouch (1 cup) Boca Meatless Ground Burger *
  • 3/4 cup chopped bell pepper
  • 1/4 cup chopped or onion (I just grate 1/2 small onion)
  • 2 cups fat-free milk
  • 1 (11oz) can Condensed Nacho Soup/Dip (I could not find this so I used 1 can of Condensed Cheddar Soup + 2 Tb McCormick Taco seasoning and it worked great. This does not alter the points)
  • 1 cup frozen whole kernal corn
  • 1 medium tomato, chopped (3/4 cup)
  • 1/2 of an 8-oz jar Mexican-style cheese spread -- scant 1/2 cup (I could not find this, so I used 1/4 of a 16oz block of Velveeta Mexican Cheese, which increased the points by .5 point per cup)

    * Using 1/2 lb 95/5 lean ground beef instead of Boca Meatless Ground Burger will increase the points by 1 point per cup.


    Optional Topping (shown in photo above)

  • Tortilla Chips (using these will increase points)

Directions:

In large saucepan, cook Boca Meatless Ground Burger, bell pepper, and onion til burger is brown and onion is tender. (If using real ground beef, drain fat from pan.)

Stir in milk, soup/dip, corn, tomato, and cheese spread. Cook and stir over medium heat about 5 minutes or til heated through.

Makes 5 (1 cup) servings.

**points calculated using Wegman's Brand Mexican Cheese Spread, Boca Meatless Ground Burger, 2 c. Fat-Free Milk, 1 can of Condensed Nacho Soup, onion, 3/4 c. bell pepper, 3/4 c. tomato, and 1 c. corn. Replacing the Mexican Cheese Spread with 4 oz Mexican-Style Velveeta will increase points by .5 point per (1 cup) serving. Replacing the Boca Meatless Ground Burger with 95/5 Lean ground beef will increase the points by 1 point per (1 cup) serving. Replacing the Condensed Nacho Soup/Dip with Condensed Cheddar Soup + 2 Tb Taco Seasoning will not alter points.
