Magic Pudding Dessert

This is extremely easy to make and very tasty! A great weeknight dessert. Try experimenting with different pudding flavors for different desserts.

Ingredients:

  • 1 (1.4 oz.) Package Sugar Free Chocolate Instant Pudding
  • 2 Cups Skim Milk
  • 30 Fat Free Premium Saltine Crackers
  • 1 (8 oz.) Container Fat Free Cool Whip

Directions: Mix the instant pudding and milk together. Place 15 crackers in the bottom of an 11x7 pan. Spoon half of the pudding mixture on top of the crackers, spreading evenly. Place the other 15 crackers on top of the pudding, and then spoon the other half of the pudding mixture on top of the last set of crackers. Top with the whole container of cool whip. Cover with plastic wrap. Refrigerate for at least 24 hours. Here's the magic part - after the dessert sits long enough, the crackers taste exactly like a thin layer of either phyllo or pie crust.

Yields: 8 servings

Notes: The original source calls for 32 crackers in an 8x8 pan, but I was unable to make them fit. 30 crackers in an 11x7 works much better.
