This is the easiest cookie recipe I have ever seen in
my entire life! These are very tasty little cookies. My only complaint
is that they get a little hard after they sit out for awhile...
but for 1 pt per cookie, how can I complain?? :-) Enjoy!
- 1.5 cups flaked coconut
- 2/3 cup all-purpose flour
- 1/2 cup sugar
- 1 teaspoon lemon extract (I like to double this, or use almond
extract instead for a different flavor)
- 2 egg whites, lightly beaten
- Cooking spray
Optional: Add a splash of fat-free milk to the batter so the cookies
are not so hard.
Combine first 5 ingredients in a bowl; stir well. For each
cookie, spoon 2 level teaspoonfuls of dough onto cookie sheets coated
with cooking spray. Flatten each cookie into a 1/4-inch round. Bake
at 325 degrees for 24 to 26 minutes or until edges are lightly browned.
Keep an eye on them after about 20 minutes so they don't get too dark.
Remove from cookie sheets, and let cool on wire racks.
Yields: 24 cookies
