Indian Potatoes, Cauliflower, and Peas

This is a very mild Indian recipe containing potatoes, cauliflower, peas, and spices. You can serve it as a main course; it is excellent served on top of Basmati rice. Also, this works very well as a side dish to almost any meal.

Ingredients:

  • 2 Tb vegetable oil
  • 1 lb. russet potatoes, peeled and cut into 1/2-inch pieces
  • 1 Tb minced fresh ginger
  • 4 c. cauliflower florets, cut into bite size pieces
  • 1/2 tsp. salt
  • 1/2 tsp. ground turmeric
  • 1/4 tsp. chili powder
  • 1/4 tsp. paprika
  • 1/2 c. water
  • 1/2 c. frozen peas, thawed

Directions:

Heat oil in large nonstick skillet, medium heat. Add potatoes and ginger; saute until potatoes are lightly browned, about 3 min. Mix in cauliflower, then salt, turmeric, chili powder, and paprika; saute 5 minutes. Add 1/2c. water; cover and simmer until vegetables are tender, about 10 minutes. Add peas and simmer 2 minutes. Season with salt and pepper.

Yields: 4 servings
