Glazed Baby Carrots

This is fantastic, and incredibly easy to throw together as a side-dish for almost any meal. This recipe is inspired by the Pam's recipe on Halfmysize.com. Thank you Pam!

Ingredients:

  • 1 lb peeled, ready-to-eat baby carrots (about 70 baby carrots)
  • 2 Tb butter (preferably unsalted)
  • 1 tsp sugar
  • salt and freshly ground pepper, to taste

Directions:

Boil carrots 5-10 minutes or til very soft. Drain.

In a large heavy skillet cook carrots in butter, sugar, salt and pepper, over moderately low heat, stirring, until heated through and glazed, about 4 minutes.

Yields 4 servings
