Baked Gigantes Beans

This is a recipe for Gigantes (Giant Beans), a delicious Greek dish combining butter beans and tomato sauce. If you like those two things, you will love this. It's very filling, and makes a great lunch or dinner with a side of Greek Salad.

Ingredients:

  • 2 15oz can butter beans
  • 1 cup tomato sauce
  • 1/2 tsp parsley
  • 1/2 tsp oregano
  • salt and pepper, to taste
  • 2 tsp extra-virgin olive oil

Directions:

Combine 2 15oz cans of beans with 1 cup tomato sauce, parsley, and oregano, crushing the oregano in your palm before you sprinkle it into the beans. Drizzle beans with a touch of extra-virgin oil and season with salt and pepper, to taste. Combine ingredients with a final toss. Bake at 450 degrees for 12 minutes or until sauce is bubbling and beans are heated through.
