German Potato Salad

Yields: 12 (1/2 cup) servings | 2 points per serving

Thsi is my mom's German potato salad recipe. It's VERY easy to make. You can adjust ALL the ingredients to taste. Although, note that points are figured with the ingredient measurements below.

Ingredients:

  • 3 lbs (6 cups) red potatoes, boiled and sliced or chopped. (Leave skins on)
  • 1/2 small onion, grated
  • 1 Tb dried parsley
  • 2/3 c. water
  • 1 Tb flour
  • 1/3 c sugar
  • 1/3 c cider vinegar

    Optional (adds extra points)

  • Bacon (cooked, drained, and chopped)
  • Chopped green onions

Directions:

Boil, and slice potatoes, leaving skins on. Mix with onion and parsley and set aside. Mix flour, sugar, water, and vinegar and bring to a boil. Pour onion mixture and flour mixture over potatoes and mix well. Salt and pepper to taste. Serve warm or cold.
