The pie is absolutely phenominal! If you like pumpkin pie and coconut, you can't possibly not love this. It's positively superb. Also, It's very easy to make - no baking required. Bon appetite!
In a large bowl, combine dry pudding mix, dry milk, and pumpkin spice. Add pumpkin. Mix well, using a wire whisk. Blend in 1/4 cup Cool Whip Lite. Pour mixture into piecrust. Refrigerate for about 15 minutes. In a small bowl, combine remaining 3/4 cup Cool Whip Lite and coconut extract. Frost top of pie with mixture. Sprinkle mini chocolate chips and coconut evenly over top. Refrigerate until ready to serve. Yields 8 slices. Nutritional Info: (per serving) 177.5,
