Crepes (French Pancakes)

This is my mom's crepe recipe and I just love to make them! You can experiment with all different kinds of fillings and toppings... fruits, syrups, powdered sugar, etc. These are great for a Saturday morning. Enjoy!

Ingredients:

  • 1 cup all-purpose flour
  • 2 egg whites (1/3 cup liquid egg whites)
  • 1 cup fat-free milk
  • 1/2 tsp salt
  • fat-free cooking spray (butter-flavored is best)

    0-point topping suggestions

  • 1 Tb light syrup
  • 1 Tb powdered sugar
  • Fresh berries or bananas
  • Cinnamon
  • 1 tsp walnuts
  • ICBINB spray

    *Note that using 2 or more 0-point toppings may add up to 1 or 2 points.

Directions:

Whisk together all ingredients until smooth. Grease 8" frying pan with fat-free cooking spray. Let pan heat up. Coat pan with thin layer of batter (approx. 1/4 cup of batter). Cook each crepe for about 30 seconds, flip, and then cook other side.

Yields: approx. 10 crepes (1.1 point per crepe)

Serving size suggestion: 3 crepes for 3.3 points
