Easy Corn Bread

Yields: 9 slices | 2.5 points per slice

This corn bread is so easy to make, my husband made the loaf shown in the photo above! Using applesauce instead of oil reduces each slice by 1.5 points if you can believe that! And it tastes just as delicious with the applesauce. Happy baking!

Pizza Ingredients:

  • 1¼ cups all-purpose flour
  • ¾ cup Enriched Yellow Corn Meal
  • ¼ cup sugar
  • 2 tsp baking powder
  • ½ tsp salt
  • 1 cup fat-free milk
  • ¼ cup applesauce (no sugar added)
  • 2 egg whites

Directions:

Preheat oven to 400º. Spray loaf pan with fat-free cooking spray. Combine dry ingredients. Stir in milk, applesauce, and egg, mixing just until dry ingredients are moistened. Pour batter into prepared pan. Bake 25-27 minutes or until light golden brown and wooden pick inserted in center comes out clean. Serve warm.

Yields: 9 slices

Nutritional Info: (per slice) 142 calories, .4 g. fat, 1.5 g. fiber (2.5 points per slice)

Variation: This recipe can also yield 12 muffins at 2 points apiece. Bake 15-20 minutes or til golden brown.
