Easy Broccoli Cheddar Quiche

This recipe is SO easy to throw together! If you're hungry, two slices makes a really filling 6.5 point meal. I recommend serving along with some fresh fruit. If you're serving it along with other brunch items, 1 slice is plenty. Even our 20 month old son loved this recipe!

Prep Time: <10 Minutes
Baking Time: 35 Minutes

Please note that you will need a 9" quiche pan or deep pie plate for this recipe.

Ingredients:

  • FF cooking spray
  • 2 cups broccoli, cut into small pieces and then steamed
  • 1 cup shredded reduced-fat cheddar cheese
  • 4 eggs
  • 1 cup fat-free milk
  • 1 cup Heart Smart Bisquick
  • Onion powder or sauteed onions, to taste
  • Salt & pepper, to taste

Directions:

Preheat oven to 400°.

Spray quiche pan with cooking spray. Place steamed broccoli in bottom of pan. Sprinkle the cheese over the broccoli. Sprinkle onion powder (or sauteed onions) on top of the cheese.

In a separate bowl, combine eggs, milk, Bisquick, salt, and pepper. Pour into the quiche pan, over the top of the broccoli/cheese.

Bake at 400° for 35 minutes. (I covered mine with foil for the last 5-10 minutes so it didn't get too dark)

Yields: 8 slices (3 points per slice; or 6.5 points for 2 slices)

Nutritional Info: (for 2 slices): 287 calories, 12.4 g. fat, 1.5 g. fiber, 9.75 g. protein (6.5 points for 2 slices, or 3 points per slice)
