Blackberry Crisp

Mmmmm... You definitely can't go wrong with blackberry crisp! It's easy to make and surprisingly only 2.5 points per serving, even with real butter! I highly recommend this dessert. Everybody will just love it!

Preparation Time: 5-10 minutes
Baking Time: 30-40 minutes

Ingredients:

The Fruit

  • About 4 cups blackberries
  • 1 Tb flour
  • 3 Tb white sugar or light brown sugar (I recommend the brown sugar!)
  • 1 tsp orange rind, finely grated (I use McCormick Orange Peel)

The Topping

  • 1/2 cup unbleached white flour
  • 6 Tb light brown sugar
  • 1/4 tsp cinnamon
  • 1/8 tsp nutmeg
  • 1/8 tsp salt
  • 4 Tb unsalted butter


Directions:

Preheat the oven to 375º. Sort through the berries and toss them with the 1 Tb flour, the 3 Tb white or brown sugar and the orange rind. Put them in an 8-inch glass pie pan or equivalent earthenware baking dish.

To prepare the topping: Combine the 1/2 cup flour, 6 Tb brown sugar, spices, and salt. Cut the butter into small pieces; then cream it into the flour mixture with the bottom of a tablespoon. Continue creaming the mixture until there is no loose flour.

Distribute the topping over the berries. Bake until the top is lightly browned, and the juices have risen around the edges, about 30-40 minutes.

Optional: Serve with a dollop of fat-free whipped cream.
