Banana Chocolate Chip Bread

This banana bread is incredibly moist, chewy, and delicious! My husband and I both loved it! My only complaint is that this bread has to be baked almost twice as long as my regular banana bread recipe, because it is SO moist! Special thanks to Pamela from Halfmysize.com!

Ingredients:

  • 1/4 cup sugar *
  • 2 cup all-purpose flour
  • 1 tsp table salt
  • 1 tsp baking soda
  • 1/2 cup (6 oz) fat-free cherry-vanilla yogurt
  • 2 egg whites
  • 3 medium bananas (soft works best!)
  • 1/3 cup semi-sweet chocolate chips

    * Using Splenda instead of sugar reduces each slice by .5 points.

Directions:

Preheat oven to 350º.

In a large mixing bowl, combine dry ingredients. In another bowl, mix wet ingredients together. Add to dry ingredients to wet ingredients, stirring well. Mash bananas and add to mix. Fold in chocolate chips. Spray loaf panwith non-stick cooking spray. Bake for 1 hour or until toothpick comes out clean. (I recommend at least 1 hour & 15 minutes. You might want to cover with foil near the end if it is getting dark.)

Yields: 8 slices (4.6 points per slice)
